Thanks to Pinterest I have a new meal every night of the week!
I've seriously fell in love with cooking!

My entire family is filled with AMAZING cooks and I'm so glad I'm following in their foot steps!

With that said, take a look at my meal plan and recipes for this week! :)

Starting with last nights dinner!

Sunday: Chicken Salad
2 cups cooked shredded chicken, cold
1 cup chopped celery
1 Tablespoon lemon juice
Salt and pepper to taste
3/4 cup mayonnaise
2 hard-boiled eggs, chopped
1. Mix chicken, celery, lemon juice, salt and pepper.
2. Add mayonnaise, mix well.
3. Fold in chopped eggs, blending throughout.
4. Serve on rolls, in a hollowed out tomato, or on a bed of crisp lettuce leaves.

Monday: Pot Roast {Crock Pot}
3-5 lb. roast (beef)
1 onion (optional)
5 or 6 large carrots, peeled
4 or 5 potatoes
1 cup of water
1. Season pot roast.
2. Place carrots and potatoes at the bottom of the Crock Pot.
3. Add roast beef.
4. Add 1 cup of water.
5. Cook on low 6-7 hours.

Tuesday: Creamy Chicken Marsala Pasta
2 large boneless, skinless chicken breasts; cut into bite sized pieces
10-12 ounces sliced mushrooms
1 small onion, diced
3 cloves garlic, minced
3/4 cup Marsala cooking wine
1/2 cup chicken broth
1/2 cup heavy cream
1 pound dry pasta + water for cooking (I used penne, rigatoni is also good)
1 cup Parmesan cheese + more for serving
5 tablespoons unsalted butter
salt and pepper to taste

1. Season chicken with salt and pepper. Melt 1 tablespoon butter in a large skillet until foaming. Cook chicken until lightly browned. Transfer to plate when done.
2.Boil water and cook pasta according to the directions.
3. Melt additional 1 tablespoon of butter in skillet, add garlic, mushrooms and onion and cook for about 6 minutes. Add cooked chicken back into the skillet. Add the Marsala, chicken broth and cream and bring to a boil. Simmer until sauce is is slightly thickened.
4. Drain pasta and reserve 1/2 cup cooking water. Return the pasta  to the pot with the remaining 3 tablespoons of butter. Add the mushrooms and chicken mixture and 1/2 cup of Parmesan cheese and cook until the pasta has absorbed some of the sauce, about 1 minute, adding the reserved cooking water as needed.
5. Season with salt and pepper and serve with additional Parmesan cheese and a garnish of chopped parsley.

Wednesday: Hearty Spaghetti and Meat Sauce
2 Tablespoon olive oil
1 pound lean ground beef or mix of ground beef with Italian sausage
1 large onion, chopped fine
1/2 teaspoon salt
3 medium garlic cloves, minced or pressed through a garlic press
1/4 cup red wine
1/2 teaspoon ground black pepper
14 ounce can tomato puree
14 ounce can diced tomatoes, drained
1/2 teaspoon dried oregano
Pasta of your choice
1/2 cup fresh basil, chopped or chiffonade
1/2 cup grated parmesan for serving
1. Heat a tablespoon olive oil in a large saute pan or Dutch oven and brown the ground beef. Drain the fat through a fine mesh sieve and set aside.
2. Add a tablespoon of olive oil to the pot and heat over medium heat until shimmering. Add the onions and 1/2 tsp of salt and cook until softened. If the bottom of the pan is turning too brown, add a little bit of water and scrape up the bits as you go. Add the garlic and cook until fragrant, about 30 seconds. Add the wine to deglaze the pan and cook until the wine is completely gone. Add the tomato puree, drained diced tomatoes, pepper, and oregano.
3. Cook the sauce at a gentle simmer over low heat, partially uncovered for 2 - 3 hours or until the sauce is thicken and ground beef is tender.
4. Cook spaghetti according to package instructions.
5.Serve over pasta, topped with basil and parmesan.

Thursday: Marinated Chicken
4 boneless, skinless chicken breasts (about 1¾ pounds total)
6 tablespoons extra virgin olive oil
4 large garlic cloves, minced (use a garlic press)
1 teaspoon dried thyme
½ teaspoon dried oregano
1¼ teaspoon salt
½ teaspoon pepper
1½ teaspoons lemon zest (you’ll need one lemon)
1. Place chicken breasts between 2 pieces of wax paper and, using a meat mallet, pound to an even ½-inch thickness.
2. Mix all ingredients except chicken together in a 1 gallon zip-lock bag. Add chicken breasts and massage marinade into meat until evenly coated. Seal the bag and place in a bowl in the refrigerator (the bowl protects against leakage); let the chicken marinate at least 4 hours or up to 12 hours.
3. Clean grill and preheat to high. Lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over grates several times until glossy and coated. Place chicken breasts on the grill (make sure they are well-coated with the marinade; the more garlic, lemon zest and herbs on the chicken, the better!). Grill, covered, for 2-3 minutes per side.

Friday: Lemon-Garlic Shrimp
3 tablespoons minced garlic
2 tablespoons extra-virgin olive oil
1/4 cup lemon juice
1/4 cup minced fresh parsley
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1 1/4 pounds cooked shrimp
1. Place garlic and oil in a small skillet and cook over medium heat until fragrant, about 1 minute. Add lemon juice, parsley, salt and pepper. Toss with shrimp in a large bowl. Chill until ready to serve.

So there you have it... our meals from now until Friday!
We typically go out on the weekends or to mine or Justin's family to eat!

  7. Nom, nom nom! Made me hungry! I'm learning to love cooking as well- but I don't get a chance to as often as I like. Lucky for me, hubs is a good cook and he gets home about 30-45 minutes before me each day and gets things going usually.

    Definitely will remember your grandma in prayers!

    I'm with you on the whole family thing. All the people in my family can cook, I;ve never really had too, but now since Ill be a wife in 8 months I WANT to cook ;)
